Recipe to warm your soul: Donna's Famous Chicken Stew
Donna's Famous Chicken Stew
4 qrts H2O
1 large onion, diced
3 stalks celery chopped
10-12 chicken thighs
4 med carrots sliced
6-8 med-lrg potatoes cut into bite size pieces
1 bay leaf
1 tbl salt
potato flakes
Boil chicken til done (1 hr) remove to cool. Strain out any excess grease from stock. Add onions, carrots, celery and bay leaf. Cook 1 1/2 hrs on lite boil. Add shredded chicken when it has cooled enough to handle. 45 minutes before serving add potatoes. Stir frequently. Add potato flakes to thicken before serving.
This freezes well so I make extra to save for lunches later. Delicious with homemade biscuits.
